Antonella Ricci (chef/Ristorante al Fornello da Ricci c.da Montevicoli 72013, Ceglie messapica, Italy), Michelin starred at age 19 and one of Italy's most renowned female chefs, is the director of the international center of mediterranean gastronomy, located in Ceglie messapica, Puglia: the heel of the boot in Southern Italy!
the project in.c.o.m.e. - international center of mediterranean gastronomy - is an innovative, cooperative initiative between puglia and greece.  The project partners are: the city of ceglie (lead organization), the city of carovigno, metsovo, and nea-the development enterprise of achaia prefecture.  
the project aims to strengthen cooperation between the two partner countries, through the creation of a series of activities aimed at promoting sustainable development in the two areas. it passes through the valorization of typical products, the spread of multifunctional agriculture, and support for alternative tourism, focusing on the cuisine of the area as a cultural resource to be used as a competitive advantage in the global market. this specialization course is aimed at those who wish to acquire and perfect the basics of authentic, mediterranean style cuisine (food and/or pastry).
the 120 hour courses will therefore be aimed at catering and pastry professionals from around the world desiring, through higher education and training, to advance their overall culinary expertise of the typical mediterranean diet.  instructors designing the curriculum and delivering the lectures will be, in terms of mediterranean cuisine, experts of international renown.  
after the successful completion of the course, those who complete and pass the final examination will receive a legal certificate of be admitted to the program, a high school diploma with hotel bias/hospitality and 2 years of work experience (documented by social secutiry/inps and/or a letter of recommendation from an employer.  or, 5 years of documented experience in the food and/or confectionary sector (documented by social security/inps and/or a letter of recommendation from an employer).  this course is a full-time, one month immersion with classes taking place monday-friday (mornings and afternoons) and saturday mornings.
